Ammini Kolukatai


Savory mini rice balls, steamed and tempered with mild spices... May be this phrase acts as definition for the Ammini Kolukatai.... or mini kolukatai :-)






Prep Time       : 8 minutes
Cooking Time : 10 minutes
Serves            : 2
Ingredients
Rice Flour      - 1/2 cup
Water            - 1 cup
Salt                - to taste
Sesame oil     - 2 tbsp
Coconut        - 2 tbsp
Mustard Seeds - 1/2 tsp
Urad Dal          - 1/2 tsp
Green Chillies   - 2
Red Chillies      - 2
Curry Leaves    - Handful
Hing                  - a pinch
Turmeric Powder - 1/4 tsp

Steps :

1. Heat a kadai, and pour water. Add in salt and let the water boil.
2. At the boiling point, slow down the stove a little ( but not too low ).. Add in the flour and oil together.,
3. Stir until a nice smooth dough is formed.
4. Let the dough cool.
5. Grease the idli plates.
6. Make small tiny balls out of the dough, place them on the idli plates and steam for 10 minutes.


7. In another kadai, heat 2 tbsp oil, I prefer Gingelly oil, splutter the mustard, urad.
8. Temper the chillies and curry leaves, turmeric powder and add in the steamed rice balls.
9. Serve hot :-)

My Tip ... Can add in as many prefered tempering items to make them spicy and as well tangy.
