Coconut Shredded Rice


My childhood favorite variety rice. Adds in nice flavor as well and tastes awesome if eaten fresh and hot from the pan :-)







Items Required :

Coconut, shredded - 1 cup
Rice, boiled - 1 and half cup
Dry spices - Cinnamon, Cloves, and Star anise, 2 each
Mustard, Urad, Cumin Seeds - a tsp each.
Green Chillies - 2
Red Chillie - 1
Salt - to taste
Small Onions - a half cup
Garlic - few pods
Curry Leaves - handful enough
Mint and Coreander Leaves - to garnish

Method :

          If incase you have left over rice, else some fresh cooked rice.
         Take a pan, add 2 tbsp oil, splutter mustard, urad, cumin seeds.
           When they start to sizzle, add in the sliced onions, chillies and curry leaves.
         Add in salt, and toss them.
         When the onions turn their shapes as red, add in the shredded coconut..
Add in chopped coreander and mint leaves and give a quick 2 sec stir and switch off the flame.
Mix in the rice.
Simple, yet filling food.
