Tapioca Root Fritters

The break through of the usual saute - seasoned variety of the tapioca root was way too boring to give a try.
Yet the tapioca root I purchased was fresh from farm and was muddy and raw and too temting to cook something new and catchy.

I ended up making my mind to oil fry them ( you can even cook them on a Paniyaram pan for low oil preferred )..

 Ingredients Required :

Tapioca Root  - 3
Besan Flour    - Half cup
Rice Flour      - 2 tbsp
Onion             - 1
Green Chillies - 2
Salt                  - to taste
Turmeric Powder - a pinch
Oil enough to deep fry the fritters.

Method :

  • Wash the tapioca root to clear away all the mud.
  • Peel off the skin.
  • Cut them into 1 inch squares.
  • Steam them.
  • Mash the thoroughly steamed tapioca root.
  • Add in finely chopped onion, green chillie and coreander leaves.
  • Mix well.
  • Add in the besan flour, rice flour, salt, turmeric powder.
  • Sape them as per your wish.
  • Check if oil is hot enough to fry.
  • Gently dip in the shaped tapioca to allow them to fry well.

Enjoy them for an evening Tea !!
