Vegetable Kadai Gravy


Right from the start of the thinking to cook this awesome Vegetable Kadai Msala until i was done with all the process.. only one thing was commanding all over my mind.. I wanted the masala to be in same par with the color and taste as we get in the Restauarant..
And when I finally succeeded, I was very happy and content with full happiness...
Was awarded the best gravy by my elder kid and he instantly appreciated saying it tastes too good..

Here goes the process to make this rich vegetable kadai gravy....



Ingredients Required :

Medium Sized Onion - 1
Tomato - 2
Cumin Seeds - 1 tbsp
Coreander Seeds - 1 tbsp
Red Chillies - 4
Cloves - 2
Cinnamon - 1
Kasthuri Methi - 1 tbsp
Ginger Garlic Paste - 2 tbsp
Turmeric Powder - a pinch
Vegetables of your choice - ( Carrot, Beans, Peas, Cabbage, Capsicum .... )
Butter - 3 tbsp
Coreander Leaves - lots to garnish
Cashews - handful
Curd - 1tbsp
Cream - 2 tbsp


Method :

Take a wide kadai, and dry fry all the ingredients ( coreander seeds, cumin seeds, red chillies, cloves, cinnamon, kasthoori methi ).

If you want the gravy to attain the same orange color as in restau, then you need to hunt for some real red colored red chillies....

Powder the fried items.

In the same kadai, add in 3 tbsp oil and saute the onion. Needs the onion to be long slit and very slim.,
Toss in the ginger garlic paste and wait till the aroma evaporates and refresh the kitchen :-)

Next, puree the tomatoes and pour into the kadai.
Add in the finely chopped vegetables, add in enough salt and a pinch of turmeric powder.
Add in the powdered kadai masala items...
Close the lid and let the vegetables gets a crunchy cook.


Since you add in these kadai fried and grinded masala, the dish gets its name aptly as the Kadai Masala..

The interesting portion of the dish arrives when you pour in well grinded paste of Cashews into this mixture. You can see the gravy thickens.
Add in the cream.

Yet the magic of the dish is not yet reached.. as you can feel the sour and tangy and spicy gravy, but then the mild sweetness will be missing... You need to add in 2 tbsp Tomato Ketchup or simply 2 tbsp of Sugar....

There the gravy goes with all the perfect combnation of the required matching taste as you enjoy in the restaurants...
