Kerala's Egg curry and Chettinad's Egg curry are my most favorite dish. Seen below is my wild idea of bringing them together :-)
Along with the Chettinad's version at the end, I have started making the masala as the Kerala style.
Ingredients:
Boiled Eggs - 2
Onion - 1 big
Tomato - 1 big
Cumin Seeds - Few
Curry Leaves - Few
Green Chillies - 2
Ginger - small piece
Garlic - small piece
Coconut - 1/4 cup
Soanf Seeds - Few
Method :
Alright, I started to splutter the mustard seeds, curry leaves together.
Kept this mixture aside.
In the same pan, added 1 tbsp oil, and seasoned the onions and tomatoes until they are well cooked.
Add crushed ginger and garlic and leave until their rawness evades off.
Took a mortar, and grinded the coconut, soanf, green chillies as paste.
Added the grinded paste to the onion tomato mixture and kept stirring until the mixture gets dry.
Tossed the eggs on top.
Gracious spread of chopped coreander leaves gives nice aroma and texture to the dry fry.
