The main & only ingredient of this recipe Medhu Vada, the Urad Dal is rich in fibre..
Contrary to the myth that the oil fried medhu vadas are unhealthy, the fibre carried in
the urad dal helps to easily digest the oil contained in it..
Well, coming to the set of ingredients you require to make them..
Take a cup of urad dal ( full size, white color)
Green chillies & Curry Leaves chopped - 1 & few
Pepper Corns - 5, 6
We shall start the process, by soaking the urad dal for 15 to 20 mins.
The dal would have increased in volume by this time.
Again if you soak for longer time, the vadas will pull more oil while cooking.
Thus you may loose the goodness of fibre in the dal and may feel very heavy after
eating the vadas.
Hence a generous 20 min soaking is enough..
Now, drain all the water & in a mortar grind the urad dal.
Just sprinkle few drops of water while grinding as the urad dal already has
absorbed the water in which they were soaked.
Adding more water or a watery batter will pull more oil again.
Sprinkle salt also as per your taste.
Grind to a fine paste.
If the urad dal is fresh & new, the batter will double in size while you grind.
Also will be very fluffy.
Alright, now add all the chopped chillies, leaves n corns into it.
Can add ginger as well if you prefer.
Heat oil to its maximum temp, & deep fry the vadas..
Now coming to the Universal hole in the vada , here is the technique!!
Take little water in a bowl.
Dip your hand in the water & take a ball of batter and make a hole in the center
& dip in oil immediately...
Can you see them getting their holes..
Yes, thats the technique..Simple!!!!
