Modhagam


Sweet version of the 'Kolukatai' - Rice ball.







For the Covering:

1.Before starting the actual cooking, you need to soak a cup of raw rice for minimum 1 hr.
  Then drain the rice thoroughly and spread a wet cotton cloth.
  Wait until the rice gets dried.
  In a mortar powder this rice to a fine smooth powder.

2. Take a pan, heat 2 cups of water until they reach the boiling point.
    Add a pinch of salt.
    Add 2tbsp oil.
    Sprinkle the rice powder slowly while stirring parallely.
   This way you can avoid the formation of lumps.
   At the time you add rice, sim the stove.




3. Mix continuously until you get the consistency of a soft dough.

Allow the dough to cool.

For the stuffing:

1. Grate half cup coconut.
2. Grate half round jaggery.
3. Powder cardamom.

   
 Now, take a pan and grease with enough ghee & oil. Add the coconut & jaggery
and keep stirring. Add the cardamom powder as well..
Bring them to a smooth paste consistency. Off the stove.

The Actual Process:

Take a ball of the dough and spread in your palm. Grease your hand so they dont stick back.
Take a spoonful of the sweet stuff and place on the spread.










Pull the ends topwise, and place on a greased steam plate.
Repeat the same for other portions.
Steam them for 7minutes.
