Kerala Vegetable Kurma


Awesome aroma and creamy taste sums up to the Kerala Veg Kurma..




Ingredients Reqd:

Chopped Vegetables ( Mixed) - A bowl
Chilli Powder - 1sp
Coreander Powder - 1/2 sp
Garam Masala - 3/4 sp
Coconut Milk - Quarter cup
Cashew nuts - 5, 6
Poppy Seeds - 1/4 sp
Fennel Seeds - 1/4 sp




Method:

In a kadai, season mustard, bay leaf for a minute each.
Add chopped onions and salt and before the onions turn color,
add in slit green chilli and a spoon of ginger & garlic paste.
Saute for 5 mins.
Add the vegetables, water and a pinch of turmeric.
Once the vegetables are half cooked, pour in the coconut milk.




Allow the vegetables to get cooked soft.
Now add in the grinded paste of cashew nuts, poppy seeds and fennel seeds.
After 3 minutes, switch off the flame.
Top long slit seasoned tomatoes on top.
