Tomato Salan


There were absolutely no zero vegetables at home. A tomato and an onion was all that i could find.

Yet wanted a rich gravy for the chappathi i make for dinner.....
After a long thought process here is what i prepared!!!






Ingredients Required:

Peanuts - handful
Coconut - quarter cup
sesame seeds - few
Red chillies - 2
Onion - 1
Tomato - 1
Ginger and Garlic - small portion
Chilli powder - 1/2 sp
Cumin powder - 1/2 sp
Coreander powder - 1/2 sp
Tamarind water - quarter cup
Jaggery - handful ( As per your sweet tooth)

Process:

Dry fry the peanuts, sesame seeds, coconut.




Grind to a fine powder.
In a kadai, heat a table spoon refined oil.
Season the cumin seeds, curry leaves, ginger and garlic and onion.




Once the ingredients are sauted well, add in the grinded powder.
Pour half cup water and in the powders mentioned above.
Allow until the raw smell goes off.
Now add the tamarind water and again wait until the rawness of tamarind is cooked thoroughly.
Slip in the jaggery and stir well.




Take the tomato, and chop the top and bottom while retaining the round shape as it is.
Gently squeeze the tomato water into the gravy. Not fully.
The water is squeezed out to help tomato suck in the gravy inside it when dropped in.
Place the tomato into the gravy. After 2 mins, switch off the flame.

The tomato will retain its original red color and shape.
At the same time would taste awesome when you taste the tomato!!!
