The tangy Ennai Kathrikai Kuzhambu is an awesome pair along with white rice.
Ingredients Required :
Small Onion - Few
Curry Leaves - Few
Tomato - 1
Brinjal - Few
Tamarind - small lime sized
Salt - as per required
Turmeric - a Pinch
Cumin Seeds - a tsp
Saunf Seeds - a tsp
Coconut - 2 tbsp
Method :
Take a pan, Heat Gingelly oil, add mustard seeds, let them splutter..
Add in Curry Leaves, and finely sliced small onions.
Slit the brinjal, and toss them along with the small onions, tomato, turmeric and chilli powder.
Allow the brinjals to get tossed until they get soft.
Take the brinjals and keep them seperate.
Soak the tamarind in warm water, and drain the juice.
Add in the tamarind water, chilli powder, jeera powder and close the pan.
Let the mixture boil enough until the raw tamarind flavor evades off...
Grind the coconut along with Saonf seeds.
Add in the brinjal and coconut paste.
Let cook for 5 minutes.
Garnish with coreander leaves.
