Honey & Lemon Muffins


The lovely peach colored muffins are an instant hit once they were out from my Oven.

 
Ingredients :
 
( makes 12 )

50 gm Caster Sugar
2 tbsp Unsalted Butter, melted and cooled slightly
150 ml Buttermilk
2 egg beaten
4 tbsp Honey
Finely grated rind of 1 Lemon
and Juice of Half a Lemon
225 gm Plain Flour
1 1/2 tbsp Baking Powder

Method:

  •            Arrange 12 cup cake wrafers. Put the sugar into a jug and add the butter, buttermilk, eggs, half the honey and lemon rind. Mix briefly to combine.
  • Sift the flour into a large mixing bowl add the baking powder and stir to combine. Make a well in the centre of the flour mixture and add the buttermilk mixture. Quickly mix together - do not overmix; the mixture should be slightly lumpy.
  • Spoon the mixture into the paper cases and bake in a pre heated oven 180 Deg C, for 18 mins, or until the cakes are cooked well. Turn out into a wire rack.
Mix the Lemon juice with the remaining honey in a small bowl and drizzle over the muffins while they are still hot. Let the muffins stand for 10 minutes before serving.
