Elai Adai


The mighty Jackfruits are a delight to eat as it is..
Again, can be used to make variety of dishes as well.
These Elai Adai's are one such sweeter version.





 















Requirements :

Well ripen Jackfruits - a medium size bowl
Jaggery - 3/4th cup
Raw Rice - 1 cup
Coconut - half cup
Salt a pinch
Elachi powder - 1 tsp
1 big Plantain Leaf

Method :

As a first step, soak the rice for few hours.
Grind them to a fine smooth batter.
The batter should be very thick ( more thick than the idli batter consistency )
Take few tbsp of this batter and mix with water.
Keep in sim - mode on stove and heat up by stirring well.
Once it gets thickened, off and set to cool.
Once chilled add this to the batter and mix well.


                         
As we are grinding the raw rice, we do this above step to further soften the batter.
Now with the batter part ready, lets go to the second step.

The second step involves the stuffing part.
Grate the jaggery and keep a pan on stove and start heating.
Meanwhile keep the grated coconut ready as well.
When the jaggery starts melting, add the elachi powder.
Mix in the grated coconut and stir well.
Add in the finely chopped jackfruit pieces as well.











Give a fine stir and once the stuffing gets to thicken, off the stove and allow to cool.

The third step invloves the ' parcel ' / 'packing ' process :-)
You need a big Plantain Leaf ( Vazhai Ilai ).
Chop them into medium portions removing the thick stems away.
In a hot water pot, put these leaves and close the lid to soften the leaves.








We do this above step, hence to avoid the tearing of leaves while we pack the dish.

Once done, I mean after 5 mins of soaking the leaves in hot water,
Take them out, flatten them on the opposite side.
Apply some oil.
Pour the thick batter, and spread like dosas.
Place the sweet stuffing on the below half semicircle part.








Fold the leaf as it is like we fold the dosas.
Also make sure all the 4 sides are given a flip-fold.







Finally, the fourth step:
Place the finely folded parcelled leaves into the idli steam vessel.
After 10minutes of steaming, off the stove.







The fifth step is too tempting :-)
Open the parcels, and enjoy the sweet..
