Ishtu - Potato Stew


Having tried Aapam and Idiyapam in the Kerala way. it would be unfair if I dont post the
Ishtu - potato stew.





Ingredients Reqd :

Potato - 3
Onion - 1
Curry Leaves - few
Green Chillies - 4
Ginger - a small size
Cococut Milk - 1 cup

Method :

In a wide pan, season mustard, curry leaves, sliced onion and green chillies.
Add in the ginger pieces as well, salt to taste and keep sauting.
Add in cooked and mashed potatoes.
No turmeric powder as the dish needs to be white in color.
Last, add coconut milk and in 2 minutes time off the stove.

Richer and Yum Yum gravy is ready.
