Vegetable Biryani


Let me tell you that this is a very lenghty process biryani.
At the end, you can truely enjoy the taste of the biryani.





Ingredients:

Basmati Rice - 1 cup
Preferred Vegetables - half cup
Saffron strands - few
Milk - 4 to 5 tsp
Garlic & Ginger - chopped finely
Cardamom - 4
Pepper Corns - 3
Cloves - 4
Cumin Powder - 1/2 tsp
Chilli Powder - 1 tsp
Cinnamon - 1 medium stick
Bay Leaf - 1 medium size

Process:

First, Cook the rice.
Second, Boil the vegetables with enough salt and water.
Soak saffron in milk.
Add the vegetable stock to the saffron milk mixture.




Drain the rice and add them into the milk- vegetable mixture.
Drain the rice again.




In a pan, saute onion, garlic, ginger, cardamom ( 2) ,
pepper corns, cloves ( 2 ).
Add the cooked vegtables, chilli powder, cumin powder and cook until the
vegetables are coated well.




In a mortar, make the powder of remaining cardamom, cloves, bay leaf and cinnamon.




Take an oven bowl, and grease well.
Add the rice and place the vegetables as the second layer on top of rice.
As a 3rd layer sprinkle the masala powder.




Keep alternating likewise.
Pour the milk-vegetable stock liquid.
Close the lid of the bowl, and in a pre-heated oven of 180 deg C.
place the bowl for 40 minutes.




Beautiful aroma and as well colorful vegetable biryani ready..
Powder the rosted peanuts and almonds and top on the biryani before serving.
