Nei Soru With Plain Onion Curry


A heavy lunch is on your table sans any mushrooms or vegetables to make the rice colorful.
The plain ghee rice, called popularly as Nei Soru is a yet another no bother ingredient ,
as no major preparations as demanded for a pulao or biryani.






Ingredients Reqd: ( Nei Soru)

Basmati Rice - 1 cup
Bay Leaf - 1 medium
Cinnamon & Clove - 1 & 2

Method:




Take a pressure cooker.
Pour 5 to 6 tbsp of ghee.
Add the bay leaf, clove and cinnamon.
After 2 minutes, add 2 cups water and salt as per taste.
Take off the bay leaf and cinnamon n clove.
Add the rice which should have been soaked atleast for 20 minutes.




I soak for a good 1 hour.
Keep in sim, and switch off the flame in 12 to 14 minutes.

Plain Onion Curry

Ingredients Reqd:




Cinnamon and Clove - 1 & 1
Cardamom - 2
Onion - 1 medium size
Ginger Garlic Paste - 1 sp
Chilli Powder - 1sp
Coreander Powder - 1/2 sp
Cumin Powder - 1/4 sp
Tomatoes - 2 small size
Cashew nuts - 4
Coconut strands - 4

Method:

In a pan, add 3 sp oil.
Season the cinnamon, clove and cardamom.
After a sec, add the finely chopped onion.
Add salt as per taste and the ginger garlic paste.
Saute for 2 mins.
Among the 2 tomatoes, finely chop 1 and take the puree from the other.
Add them in tat order into the mixture and keep sauting.
Add in all the powders mentioned and let cook until the raw smell goes away.




Now take a fine paste of the cashew and coconut.
Preferably squeeze the milk from the cashew, coconut paste into the mixture.




After a 3 minute, switch off the flame.

A perfect combo for the plain ghee rice.
