Sev Papadi Puri & Dhai Papadi Puri & Bhel Puri
Sev Papadi Puri
Serves 6 ( 25 puris )
Dough for Puris / Papadi
1 cup maida ( plain flour )
1 cup atta ( whole wheat flour )
2tsp ghee / oil
1/2 cup water
oil for frying
Topping
2 boiled potatoes - mashed and mixed with a little salt
50 gm fine sev
some hari chutney
some meethi chutney
1 onion - chopped
1 tomato - chopped
Method :
1. To prepare the puris/papadi, mix maida and atta. Add the ghee/oil and rub with the finger tips.
Add just enough water to make a stiff dough.
2. Roll small thin discs of 1 n half diameter.
3. Prick them 2 to 3 times with a fork, so that they do not swell on frying.
4. Heat oil in a kadai. Fry papadi in 2 - 3 batches, on low heat until light golden brown.
5. Place 1 tsp of salted mashed potato on each puri.
6. Sprinkle onion and tomato.
7. Pour with a tsp few drops of hari chutney and meethi chutney on each puri.
8. Sprinkle sev and garnish with coreander. Serve immediately.
Dahi Sev Papdi Puri
The same as above method.
Only inclusion is the spreading of a dollop sweetened dahi/curd on the papadi.
Bhel Puri
Again with the above same ingredients, it is very quick and instant to make the bhel puri
Only extra ingredient required is puffed rice.
1. Dry roast the puffed rice for 10 minutes.
2. Combine all the ingredients in a large mixing bowl. Mix well.
Serve immediately.
