Came across this Frittata recipe on Food Food channel. While the Frittata attracted me, the original Hero is the Palak added in this one.

Southern Spiced Carrot Soup

Bored of making the Chinese kind Soups, I determined myself to make them as Southern Spiced this time around...

Left with only 1 medium sized carrot, I was staring at quite a while wanting a recipe to make out of it. That was when I deceided to give them a Soup form :-)
